Breakfast of champions

I can eat chocolate any time of day. My tastebuds have no regard for what might be acceptable morning, noon, or night. I always keep a little stockpile in the house, though I have to change my hiding place from time-to-time as my family often discovers the stash. So when I needed a snack to take to a morning meeting, I didn't hesitate to give these cupcake brownies a try.

Some may shun chocolate for breakfast, but I'll gladly consume what others don't want. My mom shared this recipe with me and it's definitely a winner. Take a closer look. Can you smell the chocolate?

If you were here, I'd share with you. Since you're not, I'll share the recipe instead.

Brownie Cupcake-Muffins

Melt together:
2 sticks butter
4 squares semi-sweet chocolate

Add:
1/4 t. butter flavoring
1 cup finely chopped pecans

Mix in a separate bowl:
1 cup unsifted flour
1 3/4 cups sugar
4 eggs
1 t. vanilla

Combine the two mixtures with a spoon until they just come together. For regular cupcakes, spoon 1/4 cup batter into standard muffin cups. Bake at 325 degrees for 25-30 minutes. For mini brownie bites, spoon 1 T batter into mini muffin tins. Bake 12 minutes. Don't overbake!

These are easy to make and truly delicious. Try them with a big glass of milk--and save some for breakfast!

It's just the kind of chocolate cupcakes which my family and I will adore....Thanks for sharing the recipe.

I agree 100% with you when it comes to eating various things for breakfast - such as chocolate and raw potatoes ;0)
