Pumpkin bread is a fall favorite, such a treat for breakfast or even dessert. This recipe is one my mom used when I was growing up, and I've been relying on it ever since. If you give it a try, let me know!
Beat in large mixing bowl:
4 eggs
3 cups sugar
1 cup canola oil
2 cups canned pumpkin
Add:
3 1/3 cups flour
2 t. baking soda
1 1/2 t. salt
1 t. nutmeg
1 t. cinnamon
2/3 cup water
chopped pecans (optional)
Mix well at slow to medium mixer speed. Pour batter into two greased loaf pans (9 x 5) and top with pecans if desired. Bake at 350 degrees for 60 to 90 minutes.

I made this bread this morning for brunch with a couple of quiches. It was incredibly simple to make and was really delicious! Everyone really loved it.

i made this the other day and my family loved it! i sprinkled a little powdered sugar on top in addition to the nuts and it gave it just the perfect amount of extra sweetness. thanks for the recipe!
