Baking therapy

This has been an unusual week for me. It started with getting braces--yes,braces--on Monday, followed by the extraction of two teeth on Wednesday. Needless to say, I've been just a little focused on my mouth, though not too interested in eating. Tapioca pudding, soup, smoothies, and protein drinks have been my staples this week. Even so, today I felt good enough to venture into the kitchen for a little baking.

Fresh from the oven

Pumpkin bread is a fall favorite, such a treat for breakfast or even dessert. This recipe is one my mom used when I was growing up, and I've been relying on it ever since. If you give it a try, let me know!

Beat in large mixing bowl:
4 eggs
3 cups sugar
1 cup canola oil
2 cups canned pumpkin
Add:
3 1/3 cups flour
2 t. baking soda
1 1/2 t. salt
1 t. nutmeg
1 t. cinnamon
2/3 cup water
chopped pecans (optional)

Mix well at slow to medium mixer speed. Pour batter into two greased loaf pans (9 x 5) and top with pecans if desired. Bake at 350 degrees for 60 to 90 minutes.

Hope your weekend is filled with home-baked goodies and fun fall activities!

Gorgeous picture! I use this very same recipe, it's wonderful. A couple knew friends knew of it also when I passed it along, we feel it's been loved by our mother's generation for a long time.

Goodness! Feel better... I am an absolute, undisputed dental phobe (palate expander, braces twice, surgery etc.). Wishing you all the best and wish I could send you some pudding.

My desire to find something to do with my left over canned pumpkin led me to tastespotting.com where I found your recipe.

I love it!

The recipe itself is so simple and yielded two beautiful, moist, tasty loaves. Thank you!
