Changes

Signs of spring are everywhere now, and I've been anxiously searching my garden for affirmation that the season is indeed changing. Daffodils are peeking through the ground but mine are a few days away from blooming. The trees are suddenly coming to life with delicate leaves and tiny buds bursting forth.

We've had lots of changes here at home, too. My daughter had her wisdom teeth removed Thursday and has been spending the last couple of days on the couch with ice packs, watching endless television shows and cautiously eating lots of pudding, ice cream, and soup. Our son arrived home for spring break and is planning to kick back and watch college basketball. And we'll all be experiencing some major changes as my husband learned two days ago that his job will be ending in two weeks. This was not entirely unexpected, but still a change that's rocking our boat just a bit.

With all of this going on, I decided the family could use a little comfort food, and there's nothing more comforting to me than home-baked goodies. When I peeked into the refrigerator and saw a carton of buttermilk, I decided a coconut macaroon pie would fill the bill quite nicely.

Macaroon custard pie


Mmm, still warm from the oven! Here's the recipe:

Macaroon Custard Pie

4 T melted butter
1 cup sugar
4 eggs
1 cup buttermilk
2 T flour
1 cup coconut
1 t vanilla

Mix all ingredients. Pour into unbaked pie crust and bake at 350 degrees for 40-45 minutes, until center is set. Garnish with whipped cream and toasted coconut, if desired.

I confess I used a "store-bought" pie crust this time but I know it will be delicious. If you like coconut and custard, you should definitely give this a try. And it you do bake one of these delights, let me know!

Sounds like a good pie for tomorrow afternoon. Thanks for the recipe! I'm sorry to hear about your husband's job. Several years ago, the Internet consulting company I worked for shut down. My husband was in law school, we had a three-month-old baby and I had just returned from maternity leave. All that to say that it really sucked, but in the end it worked out fine. Wishing you the best.

I came from Flickr because your pie called to me so, so sweetly... how absolutely yummy.

Then I read more of your news and felt like we were so much closer despite the many miles between us... my daughter will be home this coming week for spring break, briefly but long enough to be a much needed ray of warming sunshine when job or business news for so many others close to us is less than happy. With all honesty, I can say I know how you feel. My hubby's in the same boat. I swing from being okay with it to feeling very angry at fate and frightened for our future. Perhaps Pie would help - thanks for the recipe and good luck.

I keep telling myself I'm cutting back on the sweets, and then I see that pie! YUM!
Sorry about your husbands job! Hope things will all work out for you. Makes my whine fest seem rather petty! The company my husband works at has been laying people off every few weeks lately, but we think his job might be insulated. But you just never know. Thinking of you and sending hugs!
